Mustard potato saladHere is a mustard potato salad that you are going to love. I don’t remember where I picked this one up but I made some changes to it to fit my taste. Mustard potato salad really does not have a specific region that I could identify so I guess it just depends on your taste. Anyway this is going to be a great hit at any event that you bring it to, unless your going to a carb busters party. So when you make this mustard potato salad make a big batch of it and save some for the rest of the week.
Ingredients:
• 6 medium Yukon Gold or Rose Red potatoes, boiled in skins until tender, and cooled
• 1/2 large sweet onion, diced
• 2 large stalks of celery, diced
• 4 hard-boiled eggs, chopped
• 1 teaspoons celery seed
• 1/4 cup sweet pickle relish
• 1/2 teaspoon kosher salt, or to taste
• 1/2 teaspoon freshly ground black pepper
• 1/2 cup mayonnaise
• 1/4 cup mustard
• 1 Tablespoons white vinegar or pickle juice
• 1 hard-boiled egg, cut into 8 wedges for garnish
• Parsley for garnish
• Paprika for garnish, optional

Preparation:
Boil the potatoes in salted water until tender. Let them cool down some and then peel them or not its up to you. Cube the potatoes into bit size pieces.
In a large mixing bowl add the potato cubes and the rest of the solid ingredients.
Mix the vinegar/pickle juice, mustard, and mayonnaise in a separate bowl.
Pour it over the potatoes and gently mix till everything is coated.
Garnish with eggs, paprika, and parsley.
Now here comes the important part. Cover and put it away in the chili box for at least 5 hours. It would be even better over night. The reason is that these are dense potatoes and it takes awhile for the flavors to soak in.
