German Potato SaladIf you’re like most of us when you here German Potato Salad you thing of a warn potato salad with a sweet and sour taste and bacon. And like the rest of us you would be right, but there is a cold version of German potato salad, and that will be in another recipe. So lets talk about what makes a German potato salad what it is.
What distinguishes a German potato salad is the sweet and sour vinegar dressing. Because you are not using a mayo base you can heat it up which brings its own tastes to the party. Cooking the onions makes them sweeter and so you don’t get that harsh onion bit to your salad. Bacon drippings, well what else can you say about that, everything is better with bacon.
This dish is versatile in that if you add meat to it you can server it as a main course instead of a side dish. Now having said all of that lets get to my favorite German Potato Salad recipe.


Ingredients:

Boil 4 large Yukon Gold potatoes in their skins, peel and slice:
Chop 5 thick slices of bacon
1 Cup chopped onion
Mix the following in a small bowl.
¼ Cup wine vinegar
¼ Cup water
¼ Cup sugar
Salt and pepper to taste

Cook the chopped bacon in a large skillet when the bacon is almost crisp add in the onions and cook till the onions are soft.
When the onions are soft add in the dressing and heat till it comes to a boil.
Throw in the potatoes and turn down the heat to a simmer for 5 minutes remove from the heat and serve warm.
