Classic Potato Salad
Ok so here is just a plain old Classic Potato Salad recipe that I can even remember where I got it from. Classic potato salad has been a steadfast player at picnics and family gathering for hundreds of years I would venture to say. This recipe is simple and to the point and the only thing that I might add to this to make it just a little different is a diced up sweet apple. My mother in-law adds apple to her recipe and I got to say its not bad. So here you go a plain Classic Potato salad recipe.
Ingredients:
• 1 cup mayonnaise
• 2 tablespoons vinegar
• 1/8 teaspoon pepper, or to taste
• 1 teaspoon sugar
• 5 to 6 med. yukon gold potatoes, about 1 1/2 to 2 pounds, peeled, cubed, cooked
• 1 cup thinly sliced celery
• 1/2 cup chopped onion
• 3 eggs, hard-boiled and chopped
• 1 to 2 Tbs chopped green onions, optional garnish
Salt to taste
Preparation:
Nothing fancy here on the preparation side either just throw it all in a big bowl and mix it up. Don’t get to rough with it though just mix it around enough to coat everything and stick it in the chill chest for a couple of hours.
