Heat Wave Potato Salad

Its been a heat wave here in the south with a record number of strait 90 deg plus days. So what better that a cool potato salad to bring the temp down some. On these really hot days i like to server up my Apple Potato Salad as it just seems to go better in the heat.

Classic USA Potato Salad

Here is a classic USA potato salad recipe that i picked up from cooks.com i believe. This is about as standard as you can get with this recipe. So have a good 4th and eat more potato salad.

1 cup Miracle Whip Salad Dressing
1 teaspoon mustard
1/2 teaspoon celery seed
1/2 teaspoon salt
1/8 teaspoon pepper
4 cups potatoes, cooked and cubed
2 boiled eggs, chopped
1/2 cup onion, chopped
1/2 cup celery, sliced
1/2 cup sweet pickle relish

Combine salad dressing, mustard, celery seed, salt, and pepper; mix well.

Add potatoes, eggs, onion, celery, and pickle; mix lightly. Chill. Makes 6 servings.

Potato salad for 100

With the 4th of July a weekend away I’m starting to prep for the big party. No need to wait till the last minute and feel over worked and not be able to enjoy the day.  So i have started to prepare some of the dishes and some of the ingredients that will go into them.

I have bought most of the non perishable items Potatoes and the like.

I have rendered up the bacon that i will be putting into my potato salad and i have boiled up the eggs that i will be using.  So don’t wait till the end to get started, take it from Mr. Potato Salad and get a jump on it.
