EASY SOUTHERN POTATO SALAD
Easy Southern Potato Salad is potato salad, right? Wrong! In the South we are very serious about our “Easy Southern Potato Salad.” The ingredients are about the same, but it’s the way we prepare this delicious mixture of potatoes, rich mayonnaise, plenty of eggs, condiments and spices.
It is your decision which kind of potato you use: Red, Yukon Gold, New, Russet or even Purple Potatoes. With peeling, prepping and cooking, this salad can be a bit time consuming but the best Easy Southern Potato Salad I have ever tasted was so very easy. One of the secret is to leave the skins on the potatoes. This is where a lot of the flavor and nutrients are and it makes the recipe go so much faster and easier. Another secret is to mix the ingredients together when everything is warm, not hot. This incorporation will bring a whole new dimension to an old favorite. Serve warm or chilled in the refrigerator, that is your preference.
3 pounds potatoes (of your choice, skins on)
1 cup mayonnaise (real mayo or if you must, low fat. I like Helmun’s)
1 medium onion
1 tablespoon cider vinegar
1 teaspoon sugar
2 teaspoons spicy prepared mustard
1 teaspoon celery salt
½ cut pickle relish
5 hardboiled eggs, 3 chopped in the salad, 2 sliced on top
4- 6 chopped hearts of celery stalks
½ – 1 teaspoon black pepper (to taste)
Salt to taste
Bring 2 quarts of water to a boil in a large, 6 quart covered pot. Wash your potatoes well, as you are leaving the skins on, and cut them into consistent pieces. Add potatoes to the pot and return to a boil with the cover on. Reduce heat to moderate boil and cook until tender, about 12-14 minutes.
Peel the onion and grate about 2 tablespoons. In large bowl add onion and onion juice, mayonnaise, vinegar, sugar, mustard, salt, pepper, celery salt, and pickle relish, stir or whisk until well blended. Dice celery and 3 of the chopped hard boiled eggs. Stir gently.
When the potatoes are tender, drain and cool until very warm but not hot. Add potatoes to bowl and fold until very well coated and blended. Taste and add extra salt or pepper to taste. Cover and place in refrigerator for about 2 hours.
