Well its been an eventful start to the summer here on the home front. We have or first big party of the summer coming up in a few weeks and I’m digging through the recipe book to come up with a potato salad recipe that will wow them this year. The Red, White and Blue Potato salad was a big hit on the forth of July but now i need to set it up a bit. I’ll be looking for something to leave them talking till the supper bowl.
Spring is here and potato peels are flying around my kitchen in preparation for the first picnic of the year. This year i think i am going to focus on light and healthy potato salad recipes.
Just say a show where they took a regular potato salad recipe and instead of boiling the potatoes they roasted them. Well i went right out and got a sack and made up a batch for a party that i was having that night. I got to say it was great, and i got more comments on the potato salad than anything else that night. It was just enough of a change up that it made a good recipe great.
So next time you go to make that potato salad recipe try roasting them instead.
