BEST HOMEMADE POTATO SALAD

I have prepared and tasted a variety of potato salads but the best homemade potato salad I have ever experienced is my Mom’s. It is difficult to identify the secret ingredient
that gives this salad a wonderful, fresh flavor, (the secret ingredient is “apple.”) This Potato Salad goes well with anything barbecued, ham, corned beef and chicken.

There is no exact measurement of ingredients when you add condiments to the potato base, flavor to taste. BIG RULE: You can always add more ingredients, you cannot take away.

Homemade Potato Salad is best when the potatoes are cooked in their skins and peeled and cubed when very warm. Use mature Idaho’s or the small red potatoes. Do not make a salad with left over cold boiled potatoes, by then they have lost a lot of flavor. FYI: when I use red potatoes, I sometimes leave the skin on, lots of texture and color.

Prepare THE BEST HOMEMADE POTATO SALAD as follows:

Boil 6 medium Idaho or equivalent red potatoes with skins on. Simmer until fork tender, not too soft.

When the potatoes are safe to handle, but still very warm, peel and cube. For flavor marinate potato cubes in ½ cup soup stock or bouillon. Let stand ½ hour

Chop or slice, (and add conservatively) a mixture of any of the following:
Hard-cooked eggs, celery with stems and leaves, red onions, cucumbers, pickles, capers,

After one hour or more in the refrigerator, add:

Mayonnaise, spicy mustard, cider vinegar (one teaspoon) fresh ground pepper, paprika, and one peeled and finely chopped golden delicious apple.
