Fruit Salad

peach-fruit-saladSo living in Georgia now i though a Peach fruit salad would be a good one to start off with. While i give some directions on the gelatin follow the directions on the brand you bought. They are all just a little different. Any way its that time of the year when we are stating to look of new recipes for the out doors and that don’t heat up the kitchen. So stay tuned for my series of fruit salads.
Ingredients:

1 can (28 ounces) peaches in syrup, drained, reserve syrup (about 2 cups drained peaches)
1 package lemon flavored gelatin
2/3 cup creamed cheese
1/4 cup chopped pecans
1/2 cup chilled whipping cream

Directions:
Heat a cup of peach syrup from one of the cans.
Place the gelatin in a bowl and add hot peach syrup and stir until gelatin is completely dissolved.
Place the gelatin in the frig until the mixture just starts to thicke.
When gelatin mixture is thickened, mix in peaches and cream cheese and pecans.
Fold whipped cream into gelatin mixture and turn into the prepared mold. Chill in refrigerator until firm.

Bacon Potato Salad

Everything taste better with bacon and this Bacon Potato Salad Recipe is no exception. This is one of those classic things that is simple and just very hard to improve on. The only thing I might do to this is to add a bit of apple to it to give it a sweet side.
Ingredients
Peel and cube 3 pounds of potatoes into about ¾ inch cubes
Render ½ a pound of bacon
Chop 5 green onions
Dice 3 ribs of celery
Half a cup of mayonnaise
Half a cup of sour Cream
5 chopped up radishes

Boil the potatoes in salted water till they are fork tender, should take about 15 minutes. Drain and let set for awhile till they cool off.
Add all the ingredients to a large bowl and mix gently; you don’t want mashed potato salad, that’s another recipe. A s with all cold potato salad recipes chill it over night for best results. Ok salt and pepper to taste.
So there you have it a dam good Bacon Potato Salad Recipe.

Sweet Potato Salad

Here is a sweet potato salad recipe that i created for two other recipes. The change up here is that i add 2 diced apples to this recipe and 2 sweet potatoes. This is a nice change up from the classic potato salad that we normally have at home.

INGREDIENTS

1 potatoes
2 sweet potato
2 Apples diced
4 eggs
2 stalks celery, chopped
1/2 onion, chopped
3/4 cup mayonnaise
1 tablespoon prepared mustard

DIRECTIONS

1. Bring a large pot of salted water to a boil.
2. Add potatoes and cook until tender but still firm.
3. Drain, cool, peel and chop.
4. Place eggs in a saucepan and cover with cold water.
5. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes.
6. Remove from hot water; cool, peel and chop.
7. Combine the potatoes, eggs, celery and onion.
8. Mix together the mayonnaise, mustard.
9. Add to potato mixture, toss well to coat.
10. Refrigerate and serve chilled.
11. Salt and Pepper to taste.

As always sweet potato salad will taste better if it has been refrigerated a couple of days.
