red potato salad is one of my favorite potato salads to make. Leaving the skins on make for a healthier version of the salad. While not everybody likes to leave the skin on I find that it adds additional texture to the potato salad.
This red potato salad recipe came from my grandmother and is one of the first that I ever remember eating.
3 pounds new red potatoes
half a cup low-fat mayonnaise
1 teaspoon dry mustard
1 teaspoon salt
1/4 cup diced celery
one large Apple diced
1/4 cup diced onions

Lots of buzz going on about Purple Potatoes. I just found out about them be cause my blood pressure has gone up and my wife is looking for ways to keep my eating habits in line. As it turns out purple potatoes have a good effect on your blood pressure. You can check out Web MD for Purple Potato information. Now there is a good reason to eat them potatoes. I will have to come up with a purple potato salad recipe here real soon.

Well its been an eventful start to the summer here on the home front. We have or first big party of the summer coming up in a few weeks and I’m digging through the recipe book to come up with a potato salad recipe that will wow them this year. The Red, White and Blue Potato salad was a big hit on the forth of July but now i need to set it up a bit. I’ll be looking for something to leave them talking till the supper bowl.
