So if you though that baked potato was good wait till you turn it into this baked potato salad. The name bake potato salad is a little misleading because you don’t really bake the potato. That’s because it would take to much of the moisture out of the potato and you would end up with bake mashed potatoes.

 

5 pounds Yukon gold potatoes, peeled
1 pound bacon, crisply cooked, and chopped. Keep the drippings
3 ounces butter, softened
1/2 cup chopped green onions
2 cups grated or shredded cheddar cheese
1 1/2 cups sour cream (regular or low-fat)
1 tablespoon black pepper
1 teaspoon salt

Boil the potatoes in salted water till they are fork tender. Then stick them in the chill chest until the are cold. Pull them out and cut up into 3/4 inch cubes and place in a large bowl.
Mix in the rest of the ingredients and put back into the chill chest for a couple hours.

As with most potato salads it will taste better the next day. So you say why do they call this a baked potato salad recipe? Its because you use the same ingredients that you would put on your baked potato. So there you have it a Loaded Baked Potato Salad.
